FERMENTATION
The hole procedure of the vinification takes place under the supervision of the enologist Ms Angelika Apostolaki with the care and knowledge of every variety’s features creating wines made from our souls. Every variety is being seperately wined to aquire its special features with constant check of the temperature. After the end of fermentation repening is taking place on fine mud for every variety to grow all its potentials.
