Semi-sweet Rose Wine

Adriani , Drama viticultural zone, North – east Macedonia. 5 Ha linear privately-owned vineyards situated at an altitude of 200-300 m. Clay soil of fine drainage over thin limestones. Crop yield 900-1000 kg per acre.

The harvest takes place at night, in order to have chilled grapes and not warm (contrary to the harvest that takes place during the day). As a result the grapes are, faster and without a thermal shock, cooling for the prefermentation cold maceration.

Varietal Composition
Cabernet Sauvignon 80%, Moschomavro 20%

The grapes remain in the tank in cooling conditions to acquire the desirable color. Classic rose vinification at 18οC. After the end of alcoholic fermentation, ageing on fine lees for 2 months.

Tasting Notes
Ruby color, rich aromas of cherry, strawberry and rose, passion fruits and notes of flowers. Rich, fresh and cool in the mouth with “crisp” acidity and intense aftertaste.

Food Pairing
Appetizers, green salad with pomegranate and honey sauce, cheese pie, salty cake, fried vegetables, fruit salads, dried fruits, nuts, chocolate mousse, desserts with white chocolate, yogurt with strawberries. Served in 10-12 oC.
